Cactus Pear Bread
1) 62.5 ml butter or margarine
2) 150 ml white sugar
3) 500 ml flour
4) 2 eggs
5) 25 ml milk
6) 5 ml bicarbonate of soda
7) 5 ml baking powder
8) 2 ml salt
9) 1 ml fine ginger
10) 250 ml cactus pear juice - (Liquidize edible portion of the fruit and strain through a sieve to remove the seeds)
Method :-
1) Cream butter and sugar
2) Add whipped eggs
3) Mix flour, baking powder, ginger and salt and add to above mixture
4) Add puree, milk and bicarbonate and mix thoroughly
5) Place in a small bread-pan and bake for 45 minutes at 180 degrees C
6) Serve with butter and cactus pear jam
